Ingredients |
170g pasta shapes
1 red pepper, chopped
2 handfuls cherry tomatoes, halved
2 cooked chicken breasts. sliced
2 tbsp basil pesto
2 tbsp low-fat creme fraiche

For the pesto:
40g fresh basil
25g toasted pine nuts
25g grated parmesan
3 tbsp olive oil
Blitz all ingredients except the parmesan, which you add at the
end
or use shop bought pesto |

Cook the pasta shapes
following pack instructions. Meanwhile, mix the red pepper
with the halved cherry tomatoes and chicken breast slices

Drain the pasta, then stir
through the pesto mixed with the creme fraiche. Toss
through the vegetables and chicken and eat immediately, or
pack into a container for lunch.
