Preheat oven to 180C/350F/Gas

Heat the oil in a frying pan
over a medium heat. Add the chicken pieces and onion and
fry for about 8 mins until lightly browned.

Stir in the flour and add the
stock, orange zest and juice, thyme and pepper. Spoon into
a casserole dish, cover and cook in the oven for 1 h.

Can be served with baby
carrots and mash
To Freeze: allow to cool completely. Spoon into small polybags.
Seal, label and freeze. Use within 4 months. To use, defrost
overnight. Reheat until piping hot.
